Easy Sides: Thai green beans in peanut sauce

Jeff and I both really enjoy Asian cuisine, and we like to mix our Asian flavors up a bit at home.  But Thai remains a favorite for both of us.  Part of what I like so much about Thai food is the incorporation of peanut sauce — usually a no no when I’m following Weight Watchers.  So I was thrilled to discover this Taste of Home recipe for green beans smothered in a healthy peanut sauce.

We have made this dish at least 3 or 4 times now, and at 5 PointsPlus per serving, it pairs really well with any lean meat grilled or sauteed in an Asian-type marinade (like our Thai Mint Beef in the photo above).

Very simple ingredients for the peanut sauce.

Your fresh green beans need to be trimmed.

In a small bowl, combine the soy sauce, hoisin sauce, peanut butter and red pepper flakes.

Mix together well, and set aside.

Saute shallots and ginger in oil.

Add green beans and saute until crisp yet still tender.

Add the sauce.

Toss until well and evenly coated.

Toss with cilantro and dry roasted peanuts.

Ingredients
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon creamy peanut butter
  • ⅛ teaspoon crushed red pepper flakes
  • 1 tablespoon chopped shallot
  • 1 teaspoon minced fresh gingerroot
  • 1 tablespoon canola oil
  • ½ pound fresh green beans, trimmed
  • Minced fresh cilantro and chopped dry roasted peanuts, optional
Instructions
  1. In a small bowl, combine the soy sauce, hoisin sauce, peanut butter
  2. and red pepper flakes; set aside.
  3. In a small skillet, saute shallot and ginger in oil over medium heat
  4. for 2 minutes or until crisp-tender. Add green beans; cook and stir
  5. for 3 minutes or until crisp-tender. Add reserved sauce; toss to
  6. coat. Sprinkle with cilantro and peanuts if desired.
