These are SO yummy! I found the recipe on YouTube and modified it to my liking. It was meatless but I needed a little more protein so I added ground beef.

Weight Watchers Cheese and Chile Enchiladas

Yield: 5 full servings (2 enchiladas)
Weight Watchers Info:

  • Old Points: 4 points per 1/2 cup serving
  • New PointsPlus: 4 per enchilada (8 for a full serving)

Ingredients

1 lb. very lean ground beef (95% lean)
1 28 oz. can green enchilada sauce
1 4 oz. can diced green chiles
1 1/4 c. fat free shredded cheddar cheese
10 corn tortillas

Instructions

Brown the ground beef (I tossed in some garlic, cumin, oregano and a touch of salt for seasoning).

Spread about 3/4 cup enchilada sauce in the bottom of a 9 x 12 baking dish. Cut tortillas in half and layer half the tortillas over the sauce. Next, take half the ground beef and layer over tortillas. Then sprinkle half the green chiles over the beef and top with half the cheese. Repeat these layers once more. Drizzle remaining enchilada sauce over the top (don’t worry, it looks like too much but the tortillas soak it up). Bake in oven at 375 degrees for 30 mins.

Easy, tasty and cheap!

I served with black beans.
