In a small serving bowl, mix chipotle chili powder with mayonnaise, sour cream and squeeze of lime wedges to taste. Set aside.
Dice shrimp.
Heat butter in sauté pan. Add garlic and jalapenos. Sauté until aroma is released (30 seconds). Add shrimp and honey and sauté until cooked; about 1-2 minutes.
Warm tortillas.
Prepare taco with a) shrimp, b) sauce mixture, c) cabbage, and d) cotija cheese. Squeeze with lime, if desired.
