Add red pepper, olive oil, garlic and bay leaves to the water
Heat to boil
Cover and simmer until leaves open, and can be removed easily from artichoke (use a tong–it’s hot!), approximately 45 minutes
Drain hot water and re-fill with cool water, or allow to sit until it reaches the temperature at which you prefer to eat it
Serve with butter, mayonnaise, aioli, or nothing.
Scrape meaty inside bottom portion of leaves with your teeth, discarding the rest of the leaf. Remove purplish leaves in the center and “hairy” choke at the center on top of heart. Eat heart!
