Boiled Artichokes

Ingredients
  • 2 artichokes
  • ½ cup port wine (divided)
  • 1 tsp red pepper flakes
  • 1 tbsp olive oil
  • 2 cloves garlic, chopped
  • 2 bay leaves
Instructions
  1. Cut woody stem off bottom of artichokes
  2. Cut thorny leaf ends off top of artichokes
  3. Place in pot or pan
  4. Pour ¼ cup port wine in top of each artichoke
  5. Fill pot with water to top of artichokes
  6. Add red pepper, olive oil, garlic and bay leaves to the water
  7. Heat to boil
  8. Cover and simmer until leaves open, and can be removed easily from artichoke (use a tong–it’s hot!), approximately 45 minutes
  9. Drain hot water and re-fill with cool water, or allow to sit until it reaches the temperature at which you prefer to eat it
  10. Serve with butter, mayonnaise, aioli, or nothing.
  11. Scrape meaty inside bottom portion of leaves with your teeth, discarding the rest of the leaf. Remove purplish leaves in the center and “hairy” choke at the center on top of heart. Eat heart!
