Crockpot Jerked Pork

Ingredients
  • 1 2-3 Pound boneless pork loin roast (or fattier pork roast)
  • 2-4 Tbsp of Walkerswood (or other brand or home-made) Jerk Seasoning
  • ½ cup (or a little more) of fat-free chicken broth
Instructions
  1. Rub roast with jerk seasoning--more or less depending on the intensity of flavor you desire (it really wasn't very spicy, even with a good layer of spicy rub on ours).
  2. Place in crock pot.
  3. Put ½ cup or more of chicken broth in pot (enough for a quarter inch or so in bottom of crock pot).
  4. Cook 8-10 hours on low.
  5. Shred pork in crock pot juices.
  6. Serve!
