Carolina Style Cole Slaw

Ingredients
  • 1 pound cabbage (I did half a head of green and half of purple cabbage this time, and I thought the purple bled into the rest of the slaw too much), shredded/finely chopped
  • 1 Carrot, shredded or diced into match sticks (I used a potato peeler)
  • 1 Red onion, diced
  • 1 Anaheim pepper, diced (or sub a small bell pepper if you wish)
  • ½ cup white or cider vinegar (original recipe called for white–I’ve used both successfully
  • ½ cup white sugar of Splenda (depending on how healthy you want to be–I used Splenda with my buddies and nobody noticed)
  • ¼ cup vegetable oil
  • Salt
  • Pepper
  • Celery seed
Instructions
  1. Put cabbage, carrot, onion, and green pepper into large bowl or zip-lock bag
  2. In a small saucepan, combine vinegar, sugar, and oil–heat to boiling
  3. Immediately pour over vegetables and toss to get desired wilting (let it cool a bit if tossing in a plastic bag, like I do when camping)
  4. Add salt, pepper, and celery seed to taste and toss
  5. Cover or seal and let sit several hours (or overnight, as I prefer) in refrigerator
Notes
You can use the pre-shredded cole slaw veggie bags at the grocery store if you wish (broccoli slaw bags also work). I do that at home sometimes, but the cabbage is more likely to wilt or brown if it is pre-shredded and you are waiting a few days to actually use it, plus it makes it less home-made and therefore braggable.

If camping, I pre-dice the onions and peppers at home and put in a small zip-lock bag, and pre-boil/mix the liquid ingredients and put in a jar or tupperware container, and re-warm it before tossing with the cabbage. This leaves only the cabbage and carrots to prep in camp.

You can skip the carrots or the peppers or the onion if you wish, but you probably shouldn’t skip the cabbage–unless you’re doing broccoli slaw, of course…
