Mosley's Jalapeno Cornbread

Ingredients
  • 2 Boxes Jiffy Cornbread Muffin Mix
  • 1 Can Cream Corn
  • 2 Jalapeno peppers (I used 5 smaller green peppers instead of two large ones, because that’s what I had)
  • 2 Eggs
Instructions
  1. Preheat Oven to 400 degrees.
  2. Pour mix into large bowl.
  3. Add two eggs.
  4. Add can of creamed corn.
  5. Dice jalapenos and add to mixture.
  6. Stir mixture (a few lumps are okay, don’t over-stir), let rest for 3-5 minutes.
  7. Fill 12 muffin cups ¾ full in muffin pan (there may be a bit leftover).
  8. Place in oven for approximately 20 minutes, or until golden brown.
