Instructions
Chop or rip lox into bite-sized pieces.
Beat together egg, egg substitute, and scallions.
Coat small skillet with a single spray of the oil spray and heat pan to medium.
Pour in eggs. These start to set fast. Fold eggs and scallions with a spatula for 1 minute, over medium heat. Add lox and continue to scramble for 1-2 more minute until eggs are cooked through to your liking.
Serve with sliced avocado, tomatoes, or fruit. If you don't have to watch your carbs, serve with a toasted bagel and cream cheese.
Notes
No need to cook with salt. The lox have enough salt.
