Grilled Jerk Chicken Wings in Foil Packets

Ingredients
  • 6 Chicken wings, split, or 12 individual drummettes (with skin)
  • 3 Tbsp Jerk seasoning (or to taste)
  • 1 Tbsp Vegetable oil
  • Heavy duty aluminum foil (I prefer the double-wide sized, for ease of making a packet)
  • 1 Lime, cut into wedges (totally optional)
  • Cilantro, for garnish (even more optional)
Instructions
  1. Split chicken wings, discarding tips (or spend the money to buy them pre-cut)
  2. Put wing parts, jerk seasoning, and oil into re-sealable bag or bowl. Squeeze or toss to distribute seasoning evenly. Let sit anywhere from 30 minutes to three days.
  3. Tear off about a two foot length of extra wide, heavy duty aluminum foil (or use two layers of regular aluminum foil) and dump wing parts in the middle.
  4. Loosely spread wings on foil, fold up sides of foil and crimp a seal. Fold up ends of foil and crimp another seal. If you didn't make a good seal, feel free to put another layer of foil around it and crimp it on the other side.
  5. Grill or bake on bbq, campfire, or cookie sheet in oven on high heat for 30 minutes, flipping the packet once after 20 minutes.
  6. Carefully check wings by opening seal to see if cooked/browned. If not, re-seal (or add another layer of foil) and cook another 15-20 minutes. It is hard to over-cook these.
  7. Bust open the foil packet and serve!
Notes
NOTE 1: Original recipe called for lime wedges and cilantro, but they are totally unnecessary.

NOTE 2: You can double or triple this recipe, but you will definitely need to use the wider aluminum foil for a bigger packet and you may need to cook it longer to make sure they are cooked through.
