Healthy Easy Skillet Penne with Peppers and Sausage

If you recall from my review of the Taste of Home cookbook, I am not a fan of Weight Watchers recipes. Weight Watchers recipes usually taste exactly like one would expect Weight Watchers recipes to taste.  Now, for those who don’t enjoy the regular privilege of great-tasting cooking, I’m sure Weight Watchers recipes taste great.  But, I was raised by fabulous cooks, I’m married to a fabulous cook, and I’m a pretty darned good cook myself.  So, my bar might be a bit high.

Well, this recipe satisfies my flavor criteria AND my healthy criteria.

Granted, I spice it up with Anaheim peppers, a 2nd clove of garlic, and a few more sprinkles of crushed red pepper flakes.  But, it’s actually a mighty tasty recipe.  And, it’s quick and easy enough for a busy weeknight meal.

Start with these dry ingredients.

Add the spicy Italian turkey sausage (I’m only doing a 1/2 recipe here).

Chop up fresh mushrooms, onions, peppers, and garlic.

Saute these fabulous veges in cooking spray.

Cook veges until tender.

Remove turkey from casings and add.

Cook until turkey is browned.

Stir in tomatoes and simmer until flavors are blended.

Ingredients
  • 1 spray(s) cooking spray
  • 2 medium green pepper(s), cut into thin strips (I like Anaheims)
  • 1 medium garlic clove(s), minced (I use 2 cloves)
  • 1 medium onion(s), thinly sliced
  • 1 cup(s) mushroom(s), sliced
  • 1 pound(s) raw turkey sausage, spicy-Italian flavor
  • ⅛ tsp dried oregano, crushed
  • ¼ tsp table salt
  • ⅛ tsp black pepper, freshly ground
  • ¼ tsp crushed red pepper flakes (or to taste)
  • 14½ oz canned diced tomatoes
  • 3 cup(s) cooked whole wheat pasta, penne, kept hot
  • 6 Tbsp grated Parmesan cheese
Instructions
  1. Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add green pepper, garlic, onion and mushrooms; cook, stirring frequently, until almost tender, about 7 to 8 minutes.
  2. Remove turkey from casings; add turkey to skillet and brown until no longer pink, stirring occasionally, breaking it up with a wooden spoon as it cooks, about 6 minutes. Add oregano, salt, black pepper and red pepper flakes; stir in tomatoes. Simmer until heated through and to allow flavors to blend, about 5 minutes.
  3. Spoon penne into a deep serving bowl; top with sausage mixture and sprinkle with cheese.
Notes
Yields about 1½ cups per serving.
