Guest Post: Honey Chipotle Shrimp Tacos

Ingredients
  • 12 small corn and/or flour tortillas
  • Salt & pepper
  • 2 cups shredded cabbage
  • 3 tbsp. sour cream
  • 1 lb. fresh shrimp, shells removed and deveined
  • 3 tbsp. mayonnaise
  • 1 tbsp. jalapeno, seeded and minced
  • 2 tsp. chipotle chili powder
  • 1 clove garlic
  • 2 limes, cut into slices
  • 2 tbsp. butter
  • ½ cup crumbled cotija cheese
  • 1 tbsp. honey
Instructions
  1. In a small serving bowl, mix chipotle chili powder with mayonnaise, sour cream and squeeze of lime wedges to taste. Set aside.
  2. Dice shrimp.
  3. Heat butter in sauté pan. Add garlic and jalapenos. Sauté until aroma is released (30 seconds). Add shrimp and honey and sauté until cooked; about 1-2 minutes.
  4. Warm tortillas.
  5. Prepare taco with a) shrimp, b) sauce mixture, c) cabbage, and d) cotija cheese. Squeeze with lime, if desired.
